We suggest to add a drop of water before approaching this powerhouse of sherry goodness: finished for 52 months in a 1st fill Pedro Ximenez hogshead, it has acquired a marked winey influence. Extremely fruity at the nose, but pleasantly sour: red & black cherries, raisins, dried plums and a balsamic touch of camphor & old oak. At full strength, it’s very dry and tannic, with notes of balsamic vinegar. When slightly diluted, it’s fruitier: orange juice, sour red cherries, raisins, slightly herbal.
